Egg Yolks Are High in Cholesterol—So You Shouldn't Eat Them? 500,000 People: Actually 11% Lower Risk

Many people eat only the egg white and throw away the yolk, reasoning that "egg yolks are high in cholesterol." But follow-up data from 500,000 Chinese people gives the opposite answer[[1]].

Remember Three Key Points

1. One a day is fine. Healthy adults can eat 1 egg per day, yolk included (Chinese Dietary Guidelines 2022)[[5]]; a cohort follow-up of 510,000 Chinese people showed that those who ate eggs daily actually had an 11% lower risk of cardiovascular disease (HR 0.89, with hemorrhagic stroke 26% lower)[[1]].

2. Too many reverses the benefit. A 2024 study of 16,000 Chinese people over 10 years of follow-up: eating more than 50 grams per day (about 1 egg) combined with a high-sugar, high-fat dietary pattern was associated with a 43% higher risk of cardiovascular disease (HR 1.43)[[3]]; a meta-analysis of Western populations also suggested that for each additional egg per day, the risk of all-cause mortality rose slightly by 6% (RR 1.06)[[2]].

3. What matters is how you eat them. Steaming and boiling are preferred; use less oil and avoid frying, and don't pair them with bacon or sausage; people who have already had a stroke or other cardiovascular or cerebrovascular disease should not exceed 1 per day (HR 1.40)[[4]]; those with abnormal blood lipids or diabetes should have 3-4 per week or follow their doctor's advice. The AHA 2020 pointed out that dietary cholesterol is not significantly associated with cardiovascular disease, and that the key to health is the overall dietary pattern (Mediterranean/DASH style)[[6]].
